Pork Roast with Kiwifruit


  • California kiwifruit peeled and sliced
  • 3 lbs. Pork loin roast
  • 2 tbsp. Soy sauce
  • ¾ cup Light brown sugar
  • ¼ tbsp. Fresh ginger graded
  • 3 tbsp. Fresh lemon juice
  • Slightly under-ripe bananas peeled and sliced
  • ¼ tsp. Ground cinnamon
  • Sweet red pepper thinly sliced
  • 1/4cup White wine

Pre heat oven to 325 degrees. Place pork loin roast in a shallow roasting pan in a bowl combine soy sauce, white wine and ¼ cup light brown sugar. Place roast in the oven and cook for 2 ½ hours or interior temperature 9of meat) reaches 175 degrees F, brush with sauce every 20 minutes. Place bananas in limejuice and allow to sit for 15 minutes. Combine ½ cup light brown sugar cinnamon and place atop bananas. Place bananas and peppers in with the roast for the last 20 minutes of roasting.

Serve sliced with sliced kiwifruit and bananas on top
